Where were you born, and where do you live now?

Born in Canberra Australia, currently live between Bangkok and Chiang Mai


How you describe your job?

Dad, cook, crusader... I run Thai restaurants with my wife.


How much did you spend on your last cup of coffee?

Personally, nothing I had a double espresso at the restaurant but it cost us 68 baht


What is one ingredient that is crucial to your work?

Balance. And fish sauce, fish sauce helps creates balance!


What does a culinary system mean to you?

A food system is a complex relationship that we all participate in on a daily basis some of us regularly (3 times a day). Currently it is a destructive system full of inequality and commercial incentive. I hope that changes one day!


How does your immediate locale affect your work?

I rely on the environment for survival! Without nature I’d have nothing to cook or offer in my restaurants.


Where do you draw inspiration from, in your work?

The past! The producers and my travels in Thailand mostly, but also abroad.


What impact do you want to have?

I want to leave the world a slightly better place than I found it


What change do you want to see in the food and/or drinks system?

To summarise I would like food a system that focuses on sustainable community agriculture that advocates biodiversity, cultural wisdom and regenerative farming practices.
